Why Spinach? Spinach can prevent cancer and heart diseases. It’s one of the richest sources of vitamins & minerals.

Alkaline. The protein you eat to build muscle is acidic. Spinach is one of the most alkaline foods. It prevents muscle & bone loss.

Nutrient Dense. Spinach is rich in vitamin A, calcium, phosphorus, iron, folate, potassium, and many more vitamins & minerals.

Fat Loss. Spinach fills your stomach, but is low calorie (25kcal/100g). It’s also high in insoluble fiber, improving digestion.

Green Lemonade

This is a green juice that I make at least 3-4 times a week.  It is a great way to detoxify your body and it tastes great.

Use organic ingredients.  Run everything thru a good juicer.

1 bunch Kale

1 cucumber

1 lemon (juice the entire lemon)

2 apples – your choice

1 head celery

orange & walnut quinoa

Prep Time: 5 minutes Cooking Time: 20 minutes

Yields: 4 servings

Ingredients:

1 1/2 cups dry roasted quinoa
2 navel oranges, zested
1/2 cup chopped toasted walnuts
2 1/2 cups veggie broth
2 tablespoons flat-leaf parsley, chopped
1 tablespoon extra-virgin olive oil
Directions:

Rinse quinoa in a fine mesh strainer.
Add broth, oil and quinoa, bring to a boil.
Cover and lower heat to low, cooking for 12 minutes.
Remove from heat and let stand for 5 minutes.
Fluff with a fork and toss in orange zest, parsley and toasted walnuts.
Variations:

Slice zested oranges and serve them after dinner.

black bean/spinach/quinoa quessadillas

Ingredients:

Quinoa

Tortillas (Garden of Eatin whole wheat)

Black beans, drained

Baby spinach

Grated cheese

Directions: 

Take a tortilla and spread some quinoa on it. Add black beans over the quinoa. Pile a bunch of baby spinach on top of the beans. Sprinkle some cheese over the spinach. Put a tortilla on the top.

Cook on skillet until cheese melts. Or cook in microwave for 1 minute, 30 seconds.

variations:

add grilled chicken

substitute black beans with pinto beans or refried beans

add sliced avocado on top when cooked

use your favorite salsa
